Serves 12
  • 1 can GOODE pinto beans, drained and rinsed
  • 1/3 cup plant based milk
  • 1/stick melted vegan butter or vegetable oil
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 2 apples, peeled and grated 
  • 1 tsp baking powder
  • 1 cup flour
  • 1 tsp cinnamon


Step 1.

Preheat the oven to 360F. Line a 12-hole muffin pan with paper cases

Step 2.

Add the beans to a food processor blend until smooth paste. Add the milk, butter, and sugar and blend together until smooth and creamy

Step 3.

In a bowl combine flour, cinnamon, baking powder, pinch of salt. Mix well

Step 4.

Add wet ingredients to dry and whisk well. Don’t over mix. Spoon the mixture into the paper cases

Step 5.

Sprinkle a few oats on top of each muffin and bake in the oven for 20-25 minutes. Before serving, drizzle a little honey or maple syrup on top of the muffins
