BLACK BEAN & CORN CHILI

  • 1 Red Bell Pepper
  • 1 Tomato
  • 1 can of Black Beans
  • 1/2 can of Corn
  • 1 Onion
  • 1 Clove of Garlic
  • 15 oz Tomato Sauce
  • 1 Tsp of Chili Powder
  • 1 Tsp of Ground Cumin
  • 2 Tbsp Olive Oil
  • Salt and Pepper to taste
  • Garnishing:
  • Sour cream, cilantro, Mexican blend cheese, tortilla chips

instructions

Step 1.

Heat olive oil in a large pot over medium heat. Add onion and red bell pepper along with a pinch of salt and pepper. Cook 4-5 minutes, stirring frequently.

Step 2.

Add garlic, chili powder, cumin and cook for another minute, stirring frequently.

Step 3.

Stir in diced tomatoes, black beans, corn.

Step 4.

Then add tomato sauce and 2 cups vegetable broth. Cover, turn heat to medium-high and bring to a simmer.

Step 5.

Reduce heat and simmer over medium-low for 5-7 minutes, stirring frequently. Add remaining cup of broth if desired.

Step 6.

Season to taste with salt and pepper.

Step 7.

Garnish with Mexican blend cheese, sour cream, tortilla chips and fresh chopped cilantro.
