BLACK BEANS & GREEN PEAS WITH RICE & BARLEY

Ingredients

Serves 4
  • 1 can GOODE black beans
  • 1 can GOODE green peas
  • 1 pouch of instant barley
  • 1 cup of uncooked rice
  • 2 cloves of garlic – chopped
  • 1/2 bunch of fresh Italian parsley
  • 3 stalks of celery with leaves
  • 4 scallions
  • 1 Jalapeño
  • Salt and pepper to taste
  • 2-3 tbsp Olive oil

instructions

Step 1.

Cook the rice and barley according to package instructions.

Step 2.

On a heated griddle place the Jalapeño and grill on all sides and chop.

Step 3.

In a large frying pan heat a olive oil of olive oil and place the garlic, parsley, celery and scallions.

Step 4.

Sauté for a minute or two and add the cooked rice, barley, and Jalapeño.

Step 5.

Add the drained black beans and peas and toss.
Add the seasonings and another drizzle of olive oil.
