- 1 can Goode Blackeye Peas
- 3 tablespoons Tahini paste
- 3 tablespoons Extra virgin olive oil
- 1 Lemon (3 tablespoons)
- 3 to 4 tablespoons ice cold Water
- 1/2 teaspoon Onion powder
- 2-3 Garlic cloves
- Salt – as per your taste
- 1/8 teaspoon Smoked paprika
Drain (reserving liquid) and rinse blackeye pea under cold water then place in food processor.
Add Tahini paste, lemon juice, olive oil , salt, onion and garlic , paprika then Blend together until creamy and smooth , add ice cold water as needed to get the perfect consistency.
Add more salt and pepper to taste. Serve with delicious warm pita bread or toast.
I liked to drizzle some tempering of olive oil ( with garlic and lemon zest) and you can add little chopped Sun-dried tomatoes and roasted sesame seeds.
