Vegan Chocolate Chip Cookies

Chickpea Chocolate Chip Cookies

Serves 3-4

1 cup can chickpeas @goode_foods 
129 g peanut butter 
40 g almond flour 
1 tbsp Cocoa powder 
50 g brown sugar 
80.5 g maple syrup 
2 tsp aquafaba from chickpea can @goode_foods 
2 tsp vanilla extract
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup chocolate chips 


Step 1.

Preheat the oven to 350 degrees Fahrenheit.

Step 2.

Grind chickpea in a food processor until smooth.

Step 3.

Add sugar, peanut butter in a bowl and mix it , add maple syrup , aquafaba and mix well until combine.

Step 4.

Then add remaining dry ingredients along with chocolate chip and fold everything nicely.

Step 5.

Use a ice cream scoop to scoop the dough and add to a baking sheet lined with parchment paper. since they don’t actually spread a ton while baking its good to gently spread them little using your finger.

Step 6.

Top each cookie with a few additional chocolate chips and, bake for 11-15 minutes.

Step 7.

Remove from the oven and let cool, they’ll firm up a bit as they cool. Sprinkle with salt flakes and enjoy!
