Serves 6
  • 1 can GOODE Pinto beans, drained and rinsed
  • 1 can GOODE Black beans, drained and rinsed
  • 1 cans GOODE Red Kidney beans, drained and rinsed
  • 1 small onion, diced
  • 2 carrots, peeled, chopped
  • 2 stalks celery, diced
  • 1 clove garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp dried Italian seasoning
  • 4 cups vegetable broth
  • 7 oz diced tomatoes
  • 1 large potato, peeled, chopped
  • 2 tbsp olive oil
  • Salt and pepper to teste
  • fresh parsley for garnish


Step 1.

In a large pot add olive oil, onions, garlic, carrots, and celery. Cook over medium-high heat for about 8 minutes to soften the vegetables.

Step 2.

Add the tomato paste, dried Italian seasoning salt, and pepper. Cook and stir for 1 minute.

Step 3.

Pour in the vegetable broth, diced tomatoes, potato, and the beans.

Step 4.

Stir to combine, cover with a lid, and simmer for 20 minutes.
Garnish with fresh parsley.
