- 1 can GOODE Pinto beans, drained and rinsed
- 1 can GOODE Black beans, drained and rinsed
- 1 cans GOODE Red Kidney beans, drained and rinsed
- 1 small onion, diced
- 2 carrots, peeled, chopped
- 2 stalks celery, diced
- 1 clove garlic, minced
- 2 tbsp tomato paste
- 1 tbsp dried Italian seasoning
- 4 cups vegetable broth
- 7 oz diced tomatoes
- 1 large potato, peeled, chopped
- 2 tbsp olive oil
- Salt and pepper to teste
- fresh parsley for garnish
Step 1.
In a large pot add olive oil, onions, garlic, carrots, and celery. Cook over medium-high heat for about 8 minutes to soften the vegetables.
