Ingredients

  • 2-3 Tomatoes
  • 1 small Onion
  • 1 clove of Garlic 
  • 1 can of Black Beans 
  • 1/2 can of Corn
  • 1 tsp Cajun Seasoning
  • 1 tsp dry Thyme
  • 1/4 tsp Smoked Paprika 
  • 1 tbsp Paprika
  • 2 tbsp Fresh Coriander Leaves
  • 3 Vegan Sausage links of your choice (optional)
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

instructions

Step 1.

In a large Skillet, add 2 Tbsp. of Olive oil and preheat it over medium high heat.

Step 2.

Add onion, garlic, celery, green bell pepper, season with salt and pepper, and cook for about 5-7 mins. Add the spices and dry thyme, mix well.

Step 3.

Add brown rice and puréed tomatoes, stir, let it cook for about 7 min. Add 4 cups of water and salt to your taste.

Step 4.

Cover and let it cook on medium heat for about 15-20 min.

Step 5.

Meanwhile, cut vegan sausages and fry them on skillet.

Step 6.

When the rice is cooked, add vegan sausages and fresh coriander leaves. Mix and Serve with slice of lime. Enjoy!
