Red Beans & Rice

Serves 3-4
  • 1 1/2 cup basmati rice
  • 2 tbsp vegetable oil
  • 1 cup Goode Foods dark red kidney beans 
  • 1/2 cup Goode Foods pinto beans 
  • 1 onion finely chopped
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 tbsp minced garlic
  • 1 tbsp chopped jalapeno 
  • 2 tbsp tomato purée 
  • 1/4 cup worchestershire sauce
  • 1 tbsp fresh thyme
  • 2 tsp freshly ground black pepper
  • 1 tsp kosher salt
  • 1/2 tsp paprika
  • 1 tsp cajun spice 
  • 4 green onions white and green parts, chopped


Step 1.

In a large saute pan, heat the oil over medium high heat until shimmering.

Step 2

Add the onion, green and red bell peppers, garlic and jalapeno to the pan, and cook over medium high heat until the vegetables are soft, Stirring occasionally until 10 minutes.

Step 3.

Add Worcestershire sauce, tomato purée, thyme, black pepper, salt, paprika, cajun spice and green onions. reduce the heat to low and cook until the flavors are well blended, Add washed and drained dark red kidney beans and pinto beans by @goodefoodsinc along with cooked rice and mix it well cover it and let it cook about 15 minutes on low heat . Serve immediately.
