Sweet Pea Pesto Pasta Sauce

Serves 3-4
  • PESTO:
  • 1 1/2 cups packed basil
  • 1/2 cup packed flat leaf Italian parsley
  • 1/2 cup fresh coriander leaves 
  • 1 cup Goode Foods sweet peas
  • 4 cloves garlic 
  • 1/4 cup toasted pistachios 
  • 1 medium lemon 
  • 1/4 cup Parmesan cheese
  • 1 pinch sea salt 
  • 1/4 cup olive oil
  • 3-4 Black pepper
  • PASTA:
  • * 1 1/2 cup boiled pasta
  • * 1 Tbsp olive oil
  • * 1/2 cup cube cut zucchini 
  • * Fresh Asparagus ( as per taste) 
  • * 1/4 cup sun-dried tomatoes, chopped
  • * Salt as per taste 



To a food processor, add basil, parsley, peas by @goode_foods garlic, pistachios, black pepper, coriander , lemon juice, parmesan cheese and sea salt. Mix to combine. While the machine is running, stream in olive oil through the spout.

Step 2.

Continue blending, scraping down sides as needed, until creamy and fully combined.

Step 3.

Heat a large saucepan over medium heat. Once hot, add olive oil, zucchini and asparagus and Sauté for 1-2 minutes.

Step 4.

Turn off heat and remove skillet from burner, then add cooked pasta and toss to coat.

Step 5.

Add 2-3 spoon full of pea pesto. Toss to combine.

Step 5.

Serve warm with additional pesto on the side, and garnish generously with additional parmesan cheese , sun dried tomato.
