VEGAN CORNBREAD

Ingredients

  • 1 cup GOODE Corn
  • 1 cup of flour
  • 1 cup of Cornmeal
  • ½ cup of Sugar
  • 2 tsp of Baking Powder
  • ½ tsp of Baking Soda
  • ½ tsp of Salt
  • 1 cup of Buttermilk
  • ½ cup of Milk
  • ¼ cup of Unsalted butter
  • 2 tbsp Vegetable Shortening

instructions

Step 1.

Place a 10 inch cast iron skillet on the stove top over medium heat and pre-heat for 10 minutes. Preheat the oven to 375.

Step 2.

In a large bowl whisk together the flour, corn meal, sugar, salt, baking powder and baking soda.

Step 3.

Add corn and give it a mix. Add the buttermilk, whole milk, and melted butter. Whisk it all together until you have a nice smooth batter.

Step 4.

Add the shortening to the hot skillet and let it melt, pour the batter into the skillet.

Step 5.

Place it into the oven and let it bake for 30 to 35 minutes. Allow to cool completely before serving. Enjoy!
