Vegan Pasta with Black Beans

Serves 3-4
  • 9 ounces uncooked pasta of your choice 
  • 2 garlic clove, minced
  • 1 can GOODE black beans, rinsed and drained
  • 2-3 tbsp sun-dried tomatoes in oil, chopped
  • 1/2 cup tomato sause
  • 1 tsp Italian seasoning
  • 1 cups fresh baby spinach
  • 1 tbsp olive oil 
  • Salt and pepper to taste


Step 1

Cook pasta according to package instructions. Meanwhile, in a large skillet, heat oil over medium-high heat.

Step 2

Add garlic and cook for 30 seconds.
Stir in black beans, sun-dried tomatoes, tomato sauce, and Italian seasoning.

Step 3

Cook for 7-10 min. Stir in spinach until wilted. Drain fettuccine; add to bean mixture and toss to combine.
