VEGAN PINTO BEAN PIE

Ingredients

  • 1 cup GOODE Pinto Beans (lightly mashed)
  • 1 stick margarine, melted
  • 1 tsp vanilla
  • ½ cup pecans, finely chopped
  • 2 tbsp walnut milk
  • 1½ cup organic raw sugar
  • 2tbsp ground flax seeds
  • 1 unbaked 9″ pie crust 

instructions

Step 1.

Preheat oven to 350°F (regular oven) or 325°F (convection oven)

Step 2.

Drain the pinto beans.

Step 3.

Combine all ingredients and pour into unbaked pie shell.

Step 4.

Bake for 50-60 minutes. Center of pie will be slightly unset. Let it cool. Enjoy!
