Vegan Steak with Green Beans

Ingredients

STEAK:
1 cup vital wheat gluten
1/2 cup GOODE chickpeas
2 tbsp nutritional yeast
2 tbsp tomato purée
1 tbsp garlic powder

1/2 tbsp smoked paprika
1 tbsp soy sauce
1/3 cup water
a splash of oil
Salt and pepper to taste

FOR THE MARINADE:
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp maple syrup

BEANS:
1 can GOODE Green Beans
1 small onion
1 clove garlic
1 tsp tomato paste
2 tbsp olive oil
Salt and pepper to taste

Step 1

Add all the ingredients, apart from the vital wheat gluten, to the food processor and process until smooth. Transfer mixture into a bowl add the vital wheat gluten and knead for two minutes then bring it together into a tight ball.

Step 2

Roll the mixture into a rough oblong shape and cut into 2 even slices. Flatten each slice with your hand so they’re roughly 1/2 inch thick and steak- shaped (you can also use a rolling pin here).
Wrap the steaks in foil and steam for 20 min.

Step 3

Put the ingredients for the marinade into a large freezer bag. Put the steaks in the bag and roll them around in the marinade so they are well coated. Leave to marinate for 20 minutes.

Step 4

When you’re ready to cook the steaks place a sauté pan over a medium-high heat. Add oil or butter. Add the steaks. Cook for 2–3 minutes on each side, basting the steaks with the oil in the pan as they cook.

Step 5.

Remove when both sides are well browned but the steak is still tender. Leave to rest for a couple of minutes before serving.

Green Beans directions:

In a skillet add olive oil, add inion and garlic and cook until soft. Add tomato paste stir for a minute. Add beans, season with salt and pepper, mix and cook covered for about 5 min.
